Fines Herbes Pasta


¼ cup minced chives

¼ cup chopped tarragon

¼ cup chopped chervil

¼ cup chopped parsley

2 eggs

1.5 cups semolina flour

½ cup all purpose flour


Mix all the herbs together and reserve 1 T. aside. Place the remaining herbs and the eggs in a small blender.  Blend until smooth.  Place both flours in a large bowl and create a well in the center.  Pour the egg mixture in the well.  Work the flour mixture into the egg by hand, eventually removing from the bowl and kneading by hand just until smooth and the green is fully incorporated.  Wrap in plastic and chill for 20 minutes or overnight. Roll through a pasta machine on your favorite setting.  We typically make fettuccini, but this would work well as angel hair or spaghetti as well.  Cook pasta for 2 minutes in well salted water (your pasta water should taste salty like the sea)!  Strain your pasta and toss with either olive oil or butter and the remaining herbs.
