Kona Inn Banana Bread


2.5 cups cake flour (cake flour is key!)

1 tsp salt

2 tsp baking soda

1 cup soft butter

2 cups sugar

2 cups mashed, ripe bananas(about 6)

4 eggs, slightly beaten

1 cup chopped walnuts, optional


Preheat oven to 350.  Butter and flour 2 loaf pans. Sift the flour, salt, and baking soda three times and set aside.  In a mixer, cream your butter and sugar. Add the eggs one at a time, being sure to scrape down the sides.  Add the bananas.  Mix thoroughly.  Gently fold in the dry ingredients.  Pour into loaf pans.  Bake approx. 50 minutes or until a skewer or knife comes out clean.

This bread is best when just barely baked, so keep a very close eye on it!
